Instructions

Step 1: Prepare Kadai Masala

  1. Heat a pan and dry roast coriander seeds, cumin seeds, fennel seeds, dried red chilies, and black peppercorns on medium heat until aromatic.
  2. Let them cool and grind into a coarse powder using a mortar-pestle or spice grinder. Set aside.

  1. In the same pan, heat 1 tbsp oil or ghee.
